Recipe

Ingredients

  • 6 large eggs
  • 2 cups of unsweetened almond milk
  • 2 cups of heavy cream
  • 2/3 cup of a keto-friendly sweetener like erythritol
  • 1/2 teaspoon of nutmeg, freshly grated
  • 1/4 teaspoon of cinnamon
  • 1 teaspoon of pure vanilla extract
  • Optional: dark rum or bourbon to taste

Instructions

  1. Separate the egg yolks from the egg whites. Reserve the whites for another use.
  2. In a large mixing bowl, whisk together the egg yolks and sweetener until well combined.
  3. In a medium saucepan, combine the almond milk, heavy cream, nutmeg, and cinnamon. Heat over medium heat until the mixture begins to simmer.
  4. Gradually add about 1 cup of the hot cream mixture into the egg yolk mixture, whisking constantly. This tempers the egg yolks and prevents them from curdling.
  5. Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  6. Remove the saucepan from heat and stir in the vanilla extract. Allow the eggnog to cool at room temperature for about an hour.
  7. If adding rum or bourbon, stir it in after the mixture has cooled.
  8. Transfer the eggnog to a sealed container and refrigerate until chilled, at least 2-3 hours or up to overnight.
