As a busy person, I’m always looking for ways to make life easier. One of the biggest challenges I face when it comes to eating is finding time to cook healthy meals that won’t take hours in the kitchen. That’s why I love keto-friendly dinners — they tend to be quick and easy, and you can usually find something delicious that fits within your dietary needs.
In this article, I wanted to explore some great keto-friendly dinner options that are easy enough for even the busiest people out there. So here are ten of my favorite dinners for busy people on the go:
1. Keto Super Bowl
This is a great option if you’re short on time but want something hearty and filling. Start by cooking up some ground beef with your favorite seasonings, then mix in some shredded cheese, diced tomatoes, sliced onions, and jalapenos (if desired). Scoop this mixture into individual serving bowls and top with avocado slices and sour cream if desired. Serve with a side salad or steamed vegetables for an easy meal that will keep you full all night long!
2. Zucchini Noodle Bowls
This one is perfect if you need something light yet satisfying. Start by spiralizing two zucchinis into noodles using a spiralizer or vegetable peeler. Then sauté them in olive oil until slightly tender. In another pan, heat up some olive oil and stir fry chicken breast (or shrimp or tofu), garlic cloves, mushrooms, bell peppers, broccoli florets, salt & pepper until cooked through. Toss together the noodles with chicken mixture along with freshly grated Parmesan cheese before serving for an amazing dinner that takes no time at all!
3. Bacon Wrapped Avocado Bites
If you’re looking for an appetizer-style dinner these bacon wrapped avocado bites are sure to hit the spot! Take one large avocado cut into cubes and wrap each cube in half slice of bacon before baking in a preheated oven at 400F degrees until bacon is crisp (around 15 minutes). Serve hot as-is or with your favorite dip such as guacamole or ranch dressing. Enjoy with a cup of hot black coffee.
4. Egg Muffin Cups
These egg muffin cups make great grab-and-go breakfast items but can also double as quick dinners too! Simply whisk together eggs with whatever veggies/meat/cheese combination you prefer before pouring into greased muffin tins. Bake at 350F degrees until golden brown (about 20 minutes) then store any leftovers in airtight containers for later use whenever hunger strikes!
5. Asian Stir Fry Bowls
For those nights when all you have energy for is throwing things in a bowl – try this stir fry bowl recipe! Heat up some olive oil over medium heat then add bite sized pieces of chicken breasts or shrimp along with thinly sliced red peppers & onions plus whatever other veggie mix you like (think carrots & snow peas). Sauté until everything is cooked through before tossing together with cooked basmati rice & seasoning of choice such as soy sauce and sriracha sauce plus sesame seeds & scallions before serving warm – yum!!
6. Cauliflower Fried Rice
Another delicious grain-free option is this cauliflower fried rice which uses riced cauliflower instead of traditional rice grains – genius right? Start by heating up 1 tablespoon each of sesame oil & coconut oil over medium high heat then sauté garlic cloves & thinly sliced onion until soft before adding minced ginger root & diced carrots followed by riced cauliflower plus seasonings like soy sauce & honey (optional). Cook everything together stirring often until everything is hot throughout then serve warm topped with fresh cilantro leaves – so tasty!!
7. Sheet Pan Fajitas
Here’s another great sheet pan meal that comes together quickly so it’s perfect for weeknights when time isn’t on your side. Preheat oven to 425F degrees then place thin strips of bell peppers & onions onto a greased baking sheet followed by seasoned chunks of chicken thighs or breasts along with optional black beans if desired before baking everything together about 10 minutes or so until vegetables are softened & chicken cooked through fully – delish!!
8. Baked Salmon Patties
These salmon patties are super simple yet packed full of flavor thanks to ingredients like canned salmon mixed into eggs and Dijon mustard plus green onion slices + capers – what more could you want? Shape salmon mixture into small patties then bake on parchment lined baking sheet at 375F degrees about 15 minutes per side flipping once halfway through cooking process – enjoy!!
9. Turkey Burgers Lettuce Wraps
Nothing says fast food quite like burgers but why not give yours a healthy twist? Simply shape ground turkey meat into patties then cook over medium heat about five minutes per side flipping once midway; meanwhile spread hummus onto butter lettuce leaves and top each patty off with slice tomato/onion combo + sprinkle feta cheese atop burgers prior to wrapping finished burgers inside lettuce leaves – voila!!
10. Avocado Toast Pizza Boats
Last but certainly not least we have these creative pizza boats made from avocados halves stuffed full of pizza toppings like mozzarella cheese + pepperoni pieces + diced tomatoes etc… Place hollowed out avocados halves onto greased baking sheet cut sides facing upwards then fill each boat generously topped off with mozzarella shreds followed by pepperoni slices etc.. Bake at 375F degrees about 15 minutes or so flipping once halfway through cooking process – bon appetit!!!
